Enjoyed by Henry IV and the vast majority of the French population, the Jambon de Bayonne is one of the best-known and most eaten listed quality brands (IGP or Indication Géographique Protégée) and you can find out all about it during a 4 day-period in the town that it is named after.
On the banks of the River Nive, come and discover the different stages that lead to the famous "Lauburu" seal that authenticates the Bayonne Ham. Take the opportunity to meet the farmers and pork butchers behind it during a fair bursting with flavours and colours.
